I’m sharing another smoothie bowl recipe that I made few days ago since I started wearing my dental appliance. I literally went on soft diet since day one of wearing it as it made chewing really difficulty for me. This is the point where I thought it was perfect to create and try new flavours for my smoothies!

This time, I wanted to make something vibrant as well as to include a flavour that I’m very familiar with. This one is a combination of blueberry and purple sweet potato.

Why purple sweet potato?

Purple sweet potato (commonly mistaken as purple yam) is also known as Okinawan potatoes has lost of health benefits that includes:

  • Excellent source of vitamin A, B and C.
  • High fiber content
  • Calcium and potassium – works to relieve inflammation of the stomach.
  • Packed with anthocyanins – which have anti-inflammatory properties.

Purple sweet potato is also a big part of my childhood. We call it kamote (in Tagalog language). It is something that we usually get for snacks. My mom usually boil it. If we are lucky enough, she fry it and covered it with caramelized brown sugar!

On the other hand, blueberry is known to be a superfood that is packed with antioxidants and phytoflavinoids. These berries are also high in potassium and vitamin C, making them the top choice of doctors and nutritionists. Not only can they lower your risk of heart disease and cancer, they are also anti-inflammatory.

I thought, this is a great combination! Don’t you? So, let’s get into work and get that purple deliciousness be done!

The Recipe:

This recipe is more like a nice-cream consistency which is my favourite! You can also cook the sweet potato ahead of time, slice them and freeze them up. I like to cook mine ahead in a big batch and just freeze them and take them out whenever I need it. Make sure to store it in an airtight container or freezer bag. You can play around with whatever toppings you want and double the recipe if you are going to serve it with friends or family.

Blueberry-Purple Sweet Potato Smoothie Bowl

Best way to eat your purple food! Easy, delicious and creamy smoothie bowl that you will crave for everyday.

Ingredients

  • 1 cup frozen cooked purple yam
  • 1/2 cup frozen blueberries
  • 1/2 cup almond milk
  • 2 tbsp. greek yogurt (optional)

Instructions

  1. MAKE AHEAD: You need to cook the purple sweet potato ahead of time so you can freeze it and use it the next day. To cook the purple sweet potato; in a medium size pan, put the purple sweet potatoes and pour water until potatoes are covered. Bring to a boil and cook for 10-15 minutes or until fork tender. Let it cool, sliced and freeze.
  1. Put all ingredients in a high speed blender or food processor. Blend until smooth and creamy like an ice cream.
  2. Transfer to a bowl. Spread toppings on top! You can add nuts, shredded coconut, fresh blueberries, granola, sliced cooked purple sweet potato, nut butter or even chopped chocolates.
